anyone know how to get stretched res whilst keeping hud the same on arma 3? not really sure how to do it, and nothing came up when I googled.

Example of what I'm looking for is like what @ Rexo has (you can leave the money in my deposit box for the shameless plug)

every time i did it thru changing my fov and using a different monitor res then what my monitor actually is with no issues

example is i have a 1920 x 1080 monitor so i would use 1600 x 1200 for 4:3

Never tried it myself but I believe this is correct. I believe you'd be changing your aspect ratio instead of resolution. I think either 4:3 or 4:5 would have the desired affect you are looking for although I can't say for sure since I've never really tried it.
