I don't understand the purpose in the camera change and don't know if it's something that is even possible to get used to because I think they broke the turning mechanics as well.

A way around this is to use a joy stick and fly like a heli taking fire constaly move and pull up. The way they set the new flying controls is like a coordinate plane so you gotta make like small fragile movements. In other words they made flying more realistic yet fucked up
